Um... blog updates

So obviously, I'm still working on some of these blog updates. I don't think anyone is reading this.... but just in case! I need to update basically all of my pages and all of my random things on here. Just wanted to have it out there just in case.

In the meantime, here's what I'm reading and sharing!

Vegan Roasted Red Pepper Pasta

So I definitely love being a vegetarian. I do like using vegan recipes and cutting out more animal products when necessary. However, my love of cheese gets in the way sometimes! Also, I'm a huge pasta fanatic and everyone always uses cashews for cream sauces. For me, cashews are way too expensive. So I was super pumped to find this recipe that's just a lot of normal ingredients!

I had picked up some fresh red pepper fettuccine from Ohio City Pasta and was super amped about it. I wanted a good red pepper sauce to go with it and found this one from Minimalist Baker. New fave blog! So I basically just copied this recipe and threw it on top of that fresh pasta with some veggies. Super pumped! Going to have to use more red peppers in the future. The parmesan on top isn't vegan, but could be if that's what you're going for!

Wait what? Trader Joe's can be cheapER?

Here goes nothing for publishing basically only a "second post."

I have such a love/hate relationship with Trader Joe's. Sure, you walk in and you feel cool, but then you see all the hot skinny girls and you wonder if you belong. You walk among the aisles and see more expensive prices.... and that's when I run out of that place. As frugal as I am though, I stayed attempted to stay patient while I walked through. And surprisingly enough, some things are cheaper there than they are at my faves (read: Aldi and Walmart).

1. Arugula

Oh, arugula, my beloved leaf. Normally for about $4 in Walmart, it was about $2 in TJ. I had too much kale and spinach already, but definitely where I'll get it next.

2. Mushrooms

Here's the thing. I felt okay with buying canned mushrooms until I once Googled them and realized that.... there are a lot of problems with canned mushrooms. But when I think about buying five total mushrooms for $2.30 at Aldi, I think about how it's not worth it. So I haven't bought them in a while. And so what that I like the baby bella mushrooms instead of the white ones? Sue me. A bigger box was available for the same price at Trader Joe's. Bring it on, mushroom risotto.

3. Nutritional yeast

Yo, if you've ever even slighted into the vegan world, you know that nutritional yeast is a must. Full of nutrients and lacking on dairy products, it's the world's favorite way to mimic cheese. Bragg's has a good brand for about $5-$6 at any grocery store. I bought a bag of it for about $3 at Trader Joe's! I need to actually measure it out to see how it compares. Even if you're not vegan, and even if not vegetarian, I still highly recommend nutritional yeast as a must-have in your pantry.

4. Vegan mayo

Look, I'm not actually vegan. I just do tend to prefer vegan products than not. Espeeeeecially ones that are meant to contain raw egg. I'm not a major mayo fan, but when I started to look for it and saw that goes for $7 at the normal grocery store, I passed. This stuff looks good for $2.30.

5. Balsamic glaze

I'd like to thank other blogs for retroactively telling me that you should not make your own balsamic blaze. Seriously, I thought I had some sort of poisoning in my apartment after trying to make my own. But hell nah, I wasn't going to pay $7 for it. $3? Sure, I'll take it.

Other things on my Trader Joe's checklist:
- Low-cal queso
- Everything but the bagel seasoning (DUH)
- Sliced almonds
- Wine..... duh?

Cheez-Its and Life

This goes out to my sweet friend, Maggie.

I haven't been on this blog in... a long time. I laugh that it still exists. That it still holds all of these memories and times of a life incredibly different than the life I'm living now.

I've wanted to blog again, but it's hard to admit that you're not the same preppy girl you were several years ago. I'm a hot damn mess. Just about everything has changed about me since the time I started this blog. But I miss it! I miss feeling like I had something to write and wanting to share.

Maggie is my Tri Delta little and has always told me she loves how much I cook. She talked about it during my senior speech and inspired me to send a basic grocery list to some of our other friends. This weekend, she snapchatted me about buying way too many Cheez-Its and told me that her kitchen is now vegetarian. "How will I ever survive without a meal plan?!" she asked me. She's the best and I love her for it.

I love to cook. I love being a vegetarian. I'm okay that I don't dress cute all the time, and don't religiously still buy monograms. And so what? It's my blog. I cook as therapy and I love it.

Damn, do I love food. I'm no chef and there are way more talented people out there than me. But hey, I enjoy it and I feel *good* about it.

Let's raise our glasses to caring about food, honesty, and people that make you want to do something you're proud of.

And Maggie, I'm sorry for publishing your love of Cheez-Its. That's why we were paired together.
