Parmesan-Encrusted Avocado Grilled Cheese

When we were on vacation in Boston this summer, we stayed in this little hotel that was on the outskirts of the city. While Boston is a huge city with lots of places to eat...this little town wasn't.

It was one of those days where we had been on our feet the whole day and waited until late to get dinner, but there wasn't anywhere to eat. Thankfully enough, after driving around for forever, we found an Uno restaurant. It was also one of those days where I would eat anything, and probably two of them because I was so hungry.

Anyways, I ordered the 'Signature Grilled 4-Cheese' sandwich. Oh my goodness gracious. It was one of the best things I've ever had in my life (also, I was insanely hungry), probably due to its parmesan-encrusted sourdough bread. That puts two of my favorites together: cheese and sourdough bread. Does it get much better?

All that to say, when I was playing around with my very first avocado the other day, I thought about that sandwich and how stinkin' good it was. So, I made my own parmesan-encrusted grilled cheese- with avocado, of course.

And it was so easy!

Parmesan-Encrusted Avocado Grilled Cheese
  • Two slices of bread
  • 1 piece of cheese (I used reduced-fat provolone, but anything works!)
  • 1/4 avocado, peeled and sliced
  • 1 tablespoon butter
  • 1/4 cup grated parmesan cheese (more or less, depending on taste)
  • Put your slice of cheese and avocado on the first slice of bread, then the second slice on top. Melt the butter and pour over the top slice of bread. Spread the parmesan cheese on top and put in toaster oven. (You could 'grill' it like a grilled cheese, but I'm afraid of the parmesan falling off, so a toaster oven or normal oven is best.) Enjoy!
