Avocado Breakfast Sandwich

One of the things that I love about breakfast foods is a good breakfast sandwich. Put some egg and cheese on an English muffin and I'm good to go. And just when you think your breakfast sandwich can't get any better...put some avocado on it.

I actually had found this recipe as an avocado egg breakfast pizza, which sounded pretty good. You toast pita bread and spread avocado on top, then layer it with a fried egg. But, I had a few issues with it; I couldn't find pita bread and am not a big fan of fried eggs (I like just egg whites), so I changed it up a little, but I loved it.


Maybe this looks a little odd, but trust me, it was good.

 

Yup, it's an Avocado Breakfast Sandwich, full of healthy fats, low cholesterol, and lots of protein (do I sound like a commercial?).

No need to write out a full recipe: you'll only need 1/4 of an avocado, an English muffin, slice of cheese (I used my favorite- reduced fat provolone), and an egg. Lay your cheese on one side of the muffin, then slice the avocado and put it on top of that. Put the whole thing in the toaster oven. Meanwhile, cook your egg however you like it, and add it to the sandwich when it's done toasting.

And there you have the best breakfast sandwich out there. Don't you just love adding avocados to everything? It's crazy to think that this is the SIXTH avocado recipe I've posted...but anyways, more to come on that tomorrow.
