Happy Flag Day! (& Mini Cupcakes)

The other day, some of my friends were talking about plans and whatnot, and they brought up June 14th as a date. I excitedly screamed, "That's Flag Day!!!!!!", because, indeed, today, June 14th IS Flag Day. I'm not really sure why or how, but I've always remembered this holiday. Maybe it's because it's some friend's birthday (..happy birthday?) or something significant happened or maybe because it's just a good day.

Regardless, I get pretty pumped about Flag Day. It's cool to know there's a reason to pull out your red, white, and blue less than a month before the 4th of July- it's kind of like an Independence Day practice, because, to be honest, no one knows that it's Flag Day. But I do in fact love our country and our flag! Here's the history behind it, because I know that you're totes interested.

So what do you do when it's Flag Day eve and you have a baking blog? You bake something festive and yummy. And when you have nothing better to do and you're still in your pajamas at 5 o'clock in the afternoon? You stay in your pajamas.

There are SO many things you can make that are red, white, and blue- just check out my holidays Pinterest board (and cry with me that we'd never thought about it before). And since I won't be home for the 4th of July (I'll be in Boston!), I had to go ahead and make my festive baked goods. I ended up not using anything on my Pinterest board but using our mini-cupcake pans to make red cupcakes with white buttercream icing and blue sprinkles!

I have to admit, as a HUGE fan of The Office, I couldn't help but laugh thinking about Kevin and his angst over mini-cupcakes:

But these mini-cupcakes are so cute! The only problem with them is that if you think that they're smaller...then you eat more- whoops.

But doesn't the batter look so exciting? There's something about just a drop of food coloring that can make a whole batter so different and cool.
I found the cake recipe (super simple, normal white cake) on, and the icing is my mom's absolutely fantastic buttercream icing. These would be great for any sort of holiday, so play around with the food coloring!
Red, White, & Blue Mini-Cupcakes
makes 48 mini-cupcakes

  • 1 cup white sugar
  • 1/2 cup (1 stick) butter
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 & 1/2 cup all-purpose flour
  • 1 & 3/4 tsp. baking powder
  • 1/2 cup milk
  • 1/4 tsp. red food coloring

  • 1 cup (1 stick) regular-flavored Crisco
  • 1 tsp. clear almond flavoring
  • 2 tbsp. water
  • 4 cups sifted powdered sugar
  • Blue sugar sprinkles

  • Preheat oven to 350 degrees. Prepare two mini-cupcake tins by spraying heavily with non-stick spray or putting liners and then spraying.
  • Cream together the white sugar and the butter. Beat in the eggs, one at a time, mixing well between each addition. Mix in the vanilla.
  • Add the flour and the baking soda and mix well. Then add in the milk until creamy and smooth.
  • Pour the batter into the tins (about 3/4 of the way) and bake for about 9 minutes or until toothpick inserted comes out clean.
  • To make the icing: beat Crisco until fluffy. Add the almond flavoring and water and mix well. Add the powdered sugar and beat until creamy.
  • Frost your cupcakes, add the sprinkles, and enjoy!
